Cook’s Corner

Are you interested in taking part in the North Florida Eggfest by being a cook? Register your cooking team to be a part of this great event. Each Cook Team will receive two complimentary tickets – tickets must be purchased for additional team members.

As an EggFest Chef, you can prepare anything you like to serve. We’ll have a Cooks Meet & Greet on Friday at 6pm, then the lighting of the Eggs at 8 a.m. on Saturday. You may prepare proteins, sauces etc. ahead of time. EggChefs should be prepared to provide a minimum of 150-300 bite sized samples to our tasters.  We are expecting 500-1,000 people in attendance this year so plan appropriately!

Remember, you are providing bite sized samples – you are not expected to provide a meal. More is fine and you are encouraged to show off your skills!

Long Cooks

EggChef’s who want to cook briskets, pork shoulders or other long cooks that can’t be accomplished between the lighting of the Eggs and 10am, may choose to start their cooks on their Eggs at home, as long as they adhere to the following guidelines:

  • Cooking items must be finished on a Big Green Egg at the North Florida EggFest.
  • EggChef’s must follow FoodSafe guidelines and ensure that the protein temperature has not been between 41-135 degrees for more than four hours. The internal temperature must reach between 145 degrees whole or 155 degrees if injected. We’ll cover these guidelines at the Meet & Greet on Friday night March 8, at 6pm.

What to Bring

All Demo Eggs are to be coordinated with James Simmons at Pinch a Penny St. Johns, St. Johns, FL 904-217-7827.

Cooks are required to bring all ingredients required for your dishes. This includes all your own food, plus what you need to cook, such as:

  • Tents
  • Tablecloths
  • Thermometer
  • BBQ Tools
  • Oven Mitts
  • Smoking Wood
  • Seasonings
  • Nonstick Cooking Spray
  • Paper Plates
  • Paper Towels
  • Napkins
  • Toothpicks
  • Plastic Utensils
  • Cleaning Supplies
  • Food Coolers
  • Knives
  • Cutting Boards
  • Table
  • Chairs

Eggcessories

If you use a demo Egg, you will have a large Big Green Egg. You can bring your own Eggcessories. Eggcessories that will not be provided, but are available for EggChef’s to purchase through Pinch a Penny St. Johns, such as:

  • V-Rack
  • Vertical Roaster
  • Drip Pan
  • Grill Extender
  • Pizza Stone

Have fun and make sure to interact with your guests and tasters. Personality and service are all part of a great tasting experience.
